Kimchi Tuna Salad
Serves 2
Ingredients
1 cup Flanagan Farm Kimchi Style Sauerkraut
2 TBS Flanagan Farm Kimchi Style Sauerkraut brine
1 – 5 oz can of tuna, well drained
2 green onions, thinly sliced
¼ cup cilantro, chopped
12 mint leaves, torn
1 lime, zested and juiced
1 TBS Soy or Tamari
1 tsp Sesame oil
1 TBS Olive oil
Sesame seeds
Kosher Salt
Black pepper
Directions
In a medium bowl add tuna, green onion, sauerkraut and mix well, being sure to break up tuna.
Add brine, lime juice, lime zest, soy, sesame oil, olive oil and season well with salt and pepper, mix well.
Add cilantro and mint and toss to combine.
Sprinkle with sesame seeds.
Serve with sliced vegetables, lettuce leaves, sesame crackers or as a sandwich on your favorite toasted, seedy bread.
