Kimchi Burrito Bowl

Servings 2 - 4

Ingredients

  • 2 cups Flanagan Farm Kimchi Style Sauerkraut
  • 1 LB Lean ground beef (can substitute ground turkey, chicken or pork)
  • 1 TBSP Sesame oil
  • 1 TBSP fresh ginger, finely minced or grated
  • 4 garlic cloves, finely minced
  • 2 TBSP Soy sauce or Tamari
  • 1 TBSP sriracha
  • ¼ cup green onions, thinly sliced
  • 1 cup cilantro, chopped
  • 1 lime
  • 1 large avocado, sliced
  • 2 cups cooked rice
  • Sesame seeds
  • Kosher Salt
  • Black pepper
  • 4 tortillas, burrito size (if making burritos)

Directions

  • In a large skillet cook ground beef with sesame oil over medium high heat for 5 minutes until browned.
  • Add garlic, ginger and 1 cup Flanagan Farm Kimchi Style Kraut, soy sauce and sriracha, bring to a simmer and cook for 5-7 minutes until the sauce coats the meat, remove from heat and season with salt and pepper. (if making into a Bowl)
  • Build  ingredients in a bowl being sure to top with Flanagan Farm Kimchi Style Kraut and a sprinkle of sesame seeds.

(if making into Burritos)

  • Build burritos
    • Start with a warmed tortilla (can warm in dry pan or 10 seconds in microwave)
    • Then place ½ cup rice in middle of tortilla
    • Top rice with ¼ cup Flanagan Farm Kimchi Style Kraut
    • Add ¼ ground beef mixture
    • Add ¼ sliced avocado, sprinkle with cilantro, green onion, sesame seeds and a squeeze of lime
    • Fold one side of tortilla over the filling, then fold in the sides and ends and roll forward
  • Repeat with remaining ingredients
